Japanese Vegetarian Curry

Tonight’s meal used 7 goodies from today’s harvest: buttercup squash, chayote squash, potatoes, carrots, apple, tomato, and chili pepper. The buttercup squash was sublime. Earthy, sweet, and creamy. Summer Harvest
